The Ultimate Spaghetti and Meatballs (Healthier Version)
There are a few times when we want pasta, actually there is a lot of times lol! But, the guilt is real in the streets and to get your pasta fix but in a healthier and still full of flavor, never missing a beat, I got the perfect dish for ya!
For the Squash:
1 Spaghetti Squash Salt and Pepper Olive Oil
Preheat oven to 350 Cut squash length-wise in half. Scrape out seeds and such! Drizzle olive oil and sprinkle salt and pepper and rub all over the casing. Place Squash in baking dish, skin side up and bake at 30-40 minutes. Once finished, flip squash over take a fork, scrape the inside and you will see lovely spaghetti looking strands.
For Meatballs:
1 and 1/2 lb. ground turkey
1 cup breadcrumbs
1 cup parmesan
2 eggs
Salt and Pepper
1 tablespoon milk
And tomato sauce of your choice
Mozzarella and your your favorite cheese!
Mix all ingredients and form meatballs not to big. I made about 25 balls. Place in preheated pan and brown meatballs, don't worry about cooking them fully, the will finish in the oven.
In your baking pan add a bit of sauce on the bottom. Place meatballs, top with remaining sauce. Place in oven for 30 min covered. Make sure fully cooked. Place cheese on-top, I put a lot cause I lovvvvvvve the queso lol! Bake uncovered or I just broiled for another 3 minutes until bubbling and melted.
Serve over your spaghetti pasta and Enjoyyyyy!
